Dromoland Castle is seeking an exceptional and experienced Assistant Restaurant Manager to join the team across Dromoland Resort. This is an exciting opportunity for an ambitious hospitality professional to support the leadership of our restaurant operations while delivering the outstanding service standards associated with Dromoland Estate.Operational Leadership:
  • Oversee the daily end-to-end operations of the restaurant offerings across the resort
  • Act as Manager-on-Duty, ensuring seamless service delivery at all times
  • Maintain exceptional service standards aligned with luxury hospitality expectations
  • Collaborate closely with the kitchen and wider resort teams to ensure consistent quality and efficiency
Team Leadership & Development:
  • Lead, motivate, and develop a high-performing front-of-house team
  • Foster a culture of professionalism, accountability, and guest-focused service
  • Support recruitment, training, performance reviews, and succession planning
  • Lead by example through a visible and hands-on presence on the restaurant floor
Financial & Commercial Performance:
  • Drive revenue growth through upselling, promotions, and service excellence
  • Monitor key performance indicators including labour costs, payroll control, stock management, and gross margins
  • Support budgeting, forecasting, and cost-control initiatives
  • Ensure strong stock control procedures while minimising wastage
Guest Experience Excellence:
  • Deliver a consistently exceptional guest journey from arrival to departure
  • Resolve guest concerns professionally and efficiently
  • Build strong relationships with members, residents, and visiting guests
  • Uphold the luxury brand standards associated with Dromoland Estate
Compliance & Standards:
  • Ensure full compliance with health, safety, and food hygiene regulations
  • Maintain and implement standard operating procedures (SOPs)
  • Support cross-departmental coordination within the Golf & Wellness Country Club
The Ideal Candidate:
  • An experienced Assistant Restaurant Manager or Assistant F&B Manager in a high-end or luxury hospitality environment
  • Commercially astute with strong financial understanding
  • A confident leader capable of inspiring and managing large teams
  • Highly organised, proactive, and solutions-focused
  • Passionate about hospitality and delivering exceptional five-star guest service
