Job descriptionThe CompanyMonroe’s is one of Galway's best-known pubs with a vibrant music scene and large customer base.The RoleMonroe’s are seeking an experienced Sous Chef to join their existing team.Responsibilities· Assist the Head Chef in planning, preparing, and executing menus.· Supervise and coordinate kitchen staff to ensure smooth service.· Maintain food quality, presentation, and consistency according to standards.· Monitor inventory, order supplies, and manage stock rotation to minimize waste.· Ensure compliance with food safety, hygiene, and health regulations.· Step into the Head Chef’s role when required, managing all kitchen operations.· Contribute to menu development, including seasonal and special offerings.· To prepare food and work within the kitchen team to ensure dishes are of the highest standards.· Ensure that the kitchen is organised and that all kitchen areas are kept clean on a daily basis.· Ensure HACCP and Health & Safety procedures are implemented and records are up to date on a daily basis.Requirements· The ideal candidate will have a minimum of 2 years’ experience in a similar role.· Candidates should be able to demonstrate flair, creativity, and skill in the kitchen.· Experience in working in a high volume busy environment.· Must be able to work well on your own initiative and to work in a team environment.· Excellent knowledge of HACCP.
