The Heritage also offers guests a number of on site activities such as our Health Club with Leisure Pool, Jacuzzi, Sauna and Steam rooms, 5km Walking Track and Cinema.We are currently looking to hire a Senior Chef De Partie to join our existing Kitchen team.Main Purpose of Job:To assist the Head / Sous Chefs with the overall running of the Kitchen/all back of house areas. To provide menus of the highest standards with the use of approved ingredients in a cost effective manner. To be responsible for maintaining a comprehensive hygiene programme to ensure all kitchen colleagues observe a proper system of Hygiene; food preparation and storage.MAIN DUTIES:Ø To assist in the implementation of a profitable and cost effective stock taking system.Ø To ensure the HACCP system is in place and operating successfully.Ø To ensure all efforts are made to achieve desired Food GP%.Ø To ensure the implementation and maintenance of all hygiene, health and safety programmes from preparation through to storage.Ø To ensure all dishes are prepared in a timely fashion and to the appropriate standard.Ø To communicate with customers where necessary..Ø To ensure a high standard of personal hygiene.Ø To assist in the preparation of food according to recipes and cooking standards.Ø To train and guide commis chefs/kitchen assistants.Ø To assist in the storage of food before and after service.Ø To ensure that hygiene is maintained and promoted in food preparation in accordance with Company Policy and Statutory requirements.Ø To ensure that food preparation areas are cleaned prior to use, maintained in a hygienic condition during service and cleaned down afterwards.Ø To ensure that cleaning equipment and materials are handled and stored in line with trained instructions.Ø To ensure that food preparation is carried out in a hygienic manner with attention paid to the Critical Control points.Ø To ensure that temperature checks are done on all fridges and freezers daily and results recorded.Ø To prepare, cook and present all dishes within area of responsibility to the correct menu specification with regard to quality and quantity.Ø To ensure that any problems with food quality are identified and dealt with or reported promptly to the appropriate person.Ø To ensure that all food items are stored under the correct conditions according to food type.Ø To ensure that knives are handled and stored in a safe manner according to trained instructions.Ø To ensure that a weekly staff menu is put in place that rotates.Ø Maintain cleaning programme in operation.Ø Ensure full knowledge with all complex facilities, including opening and closing times and promote these facilities at every opportunity.Ø To participate in all training programmes scheduled for you.Ø Be fully familiar with all Personnel policies and procedures as set out in the Company Staff Handbook and to abide by these at all times.Ø To familiarise yourself with your departmental SOP (Standards of Procedure Manual) which is available from the Head Chef.Ø To maintain departmental standards at all times.HEALTH & SAFETYØ To fulfil your obligations under the Health & Safety at Work Act 2005 and any revisions or additional legislation made thereto.Ø To ensure that reasonable care is taken for health and safety of yourself, other employees, guests and any other persons on the premises.Ø To keep work area tidy and safe and report any hazard, loss or damage to management.Ø To be aware of trained first-aid personnel on the premises and the location of first aid box.Ø To observe all safety rules and procedures, including those laid down in the Safety Statement.Ø To carry out and promote fire and accident/other safety drills as directed by the hotel safety officer.Ø To participate in all Health and Safety training scheduled for you.Ø To inform Management immediately in the event that you are personally involved in any accident or incident on the resort grounds or if you are witness to an accident or incident involving a third party.Why work for The Heritage, part of FBD Hotels:
