From Michelin-starred dining to world-class golf, including hosting the 2027 Ryder Cup, Adare Manor is a place where excellence, craft and innovation thrive.As we continue to evolve our culinary offering, we are now seeking an exceptional Head Chef to lead The Oak Room on a full-time basis.About the RoleAs Head Chef, you will be responsible for the culinary leadership and direction of The Oak Room, one of Adare Manor's flagship dining experiences. Reporting to Mike Tweedie a renowned Executive Head Chef recognised for culinary excellence and innovation, you will play a pivotal role in maintaining and elevating culinary standards, leading and inspiring a high-performing kitchen brigade, and delivering refined, produce-led menus that reflect the heritage, creativity and excellence synonymous with Adare Manor.You will combine strong operational leadership with culinary innovation, ensuring consistency, quality and an exceptional guest experience at every service.Key Responsibilities
  • Lead, inspire and develop the kitchen team, fostering a culture of excellence, professionalism and continuous learning
  • Create, execute and evolve seasonal menus that reflect the Oak Room's identity and Adare Manor's culinary philosophy
  • Maintain the highest standards of food quality, presentation and consistency across all services
  • Work closely with Mike Tweedie and the wider culinary leadership team to deliver strategic culinary objectives
  • Manage food costs, labour budgets and stock control effectively, ensuring commercial performance without compromise on quality
  • Ensure full compliance with HACCP, food safety and health & safety standards at all times
  • Support recruitment, training, performance management and succession planning within the kitchen team
  • Collaborate cross-functionally with front-of-house and wider hotel teams to deliver a seamless guest experience
Who You AreWe are looking for a passionate, driven and detail-oriented culinary leader with a proven background in high-end kitchens and a genuine commitment to excellence.You will thrive in this role if you have:
  • Significant experience as a Head Chef or Senior Sous Chef in a fine dining or luxury hotel environment
  • Exposure to Michelin-starred or award-winning kitchens (highly desirable)
  • Strong leadership and people management skills, with the ability to motivate and develop a diverse team
  • Excellent communication, organisation and time-management skills
  • Strong technical culinary expertise and a deep understanding of modern cooking techniques and classical foundations
  • Proven experience managing food costs, labour and kitchen operations in a high-volume, high-standard environment
  • A hands-on, proactive approach and a genuine passion for quality, produce and continuous improvement
